The recipes originated in convents, especially sweets confectionary,
are a fashionable topic, in most cases quite compromised. If it draws the interest
from a diversified public such as historians, gourmets and people involved in sales
and restoration, it is also true that the proof of the origins of the convent recipes
is, in many cases, far from being possible. This does not restrain some people from
claiming the opposite and placing in the market sweets confectionary allegedly
prepared on the basis of non-existent recipes from various convents and monasteries
from the whole country. After this basic clarification, this paper aims to identify
the Portuguese recipes originated in convents in the Modern Era and evaluate the
weight of American products in the preparation of sweet and savoury dishes.
Receituário conventual, mormente no âmbito da doçaria, é temática que,
pode afirmar-se, está na moda, na maior parte dos casos de forma bastante comprometida.
Se a matéria interessa a públicos tão diversificados, como historiadores,
gastrónomos e pessoas ligadas à venda e à restauração, também é verdade que a
comprovação das origens das receitas conventuais está, em muitos casos, longe
de ser possível, o que não inibe alguns de apregoarem o contrário e colocarem no
mercado doces pretensamente preparados com base em inexistentes receitas dos mais
diversos conventos e mosteiros de norte a sul do país. Posto este esclarecimento
básico, importa neste texto identificar os receituários conventuais portugueses da
Época Moderna e neles avaliar o peso dos produtos americanos na preparação dos
pratos doces e salgados.
