Portuguese influence on the cuisine of the coast of Paraná: notes on the cambira and barreado
Resumo
The presence of Portuguese colonizers was instrumental in building
the Paraná coast cuisine, although many of its contributions were absorbed into local
culture so that they are no longer recognized as such. The very difficulty of defining
a seaside cuisine today complicates this analysis. This article is a reflection on the
Portuguese influence on the contemporary cuisine of Paraná coast, electing, as focus
of analysis, two dishes very peculiar and different from each other: the Cambira and
Barreado, traditional dishes clearly influenced by Portuguese heritage and currently
used as identity symbols of the region, including in the tourism context.
